The Roast Beef Sandwich

The best picnic food, is one I can make ahead of time without any other thought than to bring it along and devour it when I get to the picnic site. This roast beef sandwich is flavorful and simple to make. If you use mayonnaise then keep this chilled but you can bring along those mayo packets that you somehow manage to collect...

Roast Beef Sandwich:
2 hoagie rolls
1 large clove of garlic crushed
1/2 lb of roast beef (sliced thin at the deli counter)
4 slices of provolone cheese
Arugula or Romaine Lettuce
1 tomato sliced into circles (or diced)
Salt and pepper
Olive oil
Mayonnaise (optional)

Slice open the the rolls and rub the insides with the crushed garlic. Lay the slices of roast beef evenly between the two and sprinkle with salt and pepper. Divide the cheese and place on the beef and place the whole thing into the broiler, just until the cheese melts. Add arugula and tomatoes and sprinkle with salt and pepper. Devour.
